Macaroni & cheese

Sorry about the crappy photo – I got so carried away chowing down that I forgot to take a picture until there was only one serving left. This has got to be the cheapest, easiest, and most satisfying meal a student can make. It also lends itself well to spicy stuff, so feel free to cover it in hot sauce, or add a teaspoonful of paprika to the cheese sauce, or even sprinkle a few chopped fresh chillies on top.

Salmon and Hollandaise fishcakes, roast potatoes with rosemary, and salad with olive oil and balsamic vinegar dressing.

Just goes to show that it pays to check the reduced section of the supermarket – the fishcakes should’ve been £4 and they were getting rid of them for £1.50! I will say though that my eyes were definitely bigger than my belly… this turned out to be a lot of food.

Roast gammon, mashed potatoes and peas.

Gammon joints are cheap, convenient, easy to prepare, and delicious. Also, there’s nothing like a leftover gammon sandwich with mustard. Get on it.

Yeah, they were amazing. The trick is to add a teaspoon of grated lemon rind.

Sorry there haven’t been any updates in a while – I’ve been home for Christmas, so I haven’t been cooking. I’m back in Liverpool now, and I’m back without the safety net of my Mam’s cooking, so the blog is back up and running again!

There’s nothing better than soup…

Leek and potato soup, with crusty bread.

Probably my favourite soup, and let’s be honest, any soup is good on a cold winters day.

Worth noting, too, that I made an enormous vat of this which cost a total of around £4 (including some posh bread) and so far, I’ve had three servings out of it. There’s still loads left… might freeze it.

Packing in the carbs…

Penne with simple tomato sauce, mozzarella, and garlic bread.

Simple tomato sauce is one of the most important things any student can learn, in my opinion. You can use it in so many different pasta dishes, and also as a base on homemade pizza.

Peel and finely chop one onion and one clove of garlic. Fry in a little olive oil, with a few teaspoons of dried oregano and basil until the onions are soft and translucent. Add one box of passata and one tin of chopped tomatoes. Season, and leave to simmer for half an hour or so until it starts to thicken. Add a slug of red wine before leaving to simmer to add richness to it.

Job’s a good ‘un.
